About Chef Matthew 

Makai Sushi is the passion project of Chef Matthew Oliver, a Hawaii native from Kauai with a lifelong love for sushi. After attending a sushi academy in Los Angeles and running a beloved sushi restaurant in Kauai before the pandemic, Chef Matthew brought his culinary expertise to San Diego. Since opening Makai Sushi on September 1, 2023, we’ve been honored to be ranked in the top 10 of all restaurants in San Diego and #8 for sushi nationwide.

Our Philosophy

At Makai, every dish is a celebration of balance—perfectly paired fish, vegetables, sauces, and sushi rice. Locally sourced and made-to-order, our menu offers a mix of traditional and modern creations, including poke bowls, sushi rolls, sashimi, soy-paper burritos, and tapas-style plates.
